Since adopting a non meat, veggie based diet it isn’t often that me and my husband share the same meals any more. But one favourite than can satisfy us both is the good old Taco. This can be adapted perfectly to accommodate clean eating but still retains the flavours that you would expect from this Mexican dish.
Method:
- Heat the coconut oil in a frying pad, adding the garlic and onion.
- Once these have softened, add your beans, tomatoes and seasonings.
- Cook everything through, you can add to your taco shells and then add the garnish of lettuce, salsa, cheese and sour cream.
- They are now ready to serve.
Ingredients to serve 2 people with 3 tacos (they are small) each:
1 tsp of Coconut Oil
2 cloves of chopped garlic
1 medium red onion
1 400g tin of 5 Bean Salad
200g of fresh chopped tomatoes
1/4 tsp of paprika
1/4 tsp of mild chilli powder (adapt to taste)
1/4 dried ground cumin
Salt & Pepper to taste
If you prefer to make your own salsa, you can’t do much better than follow the Hairy Bikers recipe:
250g/9oz fresh tomatoes, finely chopped
1 small onion, finely chopped
3 mild chillies, finely chopped
bunch coriander, finely chopped
salt, to taste
lime juice, to taste
1 tbsp water
To make the salsa, combine all the ingredients together in a bowl and serve immediately.
