Who loves to spiralize

When it comes to diet, with Fibromyalgia I believe it is important to keep things clean and as natural as possible.

Processed foods for me are no a big fat no, no and I have seen the positive benefits of adapting this way of eating. Living with a husband of Italian decent, pasta obviously is a big deal for him so when I announced that I would no longer be eating white pasta, he went out and got me in some whole wheat Pasta. If I am totally honest, I wasn’t overly keen – so what is a girl to do??

Having adopted a very “veggie” diet, I opted for courgettes strips using a potato peeler and I have to say the results were great. Courgette could very easily pass as pasta and given that it took just minutes to cook in a frying pan with a little coconut oil it was a win, win all round. I could still enjoy my husbands “nanny’s receipe” pasta sauce but without the addition of the white spaghetti.

Then one day my husband discovered the Spiralizer and was totally enthused by the ability to pass a courgette or any other vegetable through a bladed piece of kit and get noodle spaghetti or linguine (if you use the bigger blade).

It’s official we have found the perfect noodle/spaghetti/pasta substitute and as you can see from the above photograph which was my dinner this evening, who would know the difference.

I am reliably informed by chef Marinelli that tonight’s meal consisted of Spiralized courgette, roasted vegetables and wild Atlantic salmon coated in Highland Scottish flowers. I get a real kick out of looking at a meal and seeing health on a plate and I am sure that you will agree this ticks all the boxes.
